Recipes from my private collection

This recipe was passed on to me from a lady I know from walking and if I can make my favourite jam without spending the whole day in the kitchen, I'm happy to share this with all my busy friends.
Microwave Jam

2 lbs fruit       1 kilo sugar     = 5 jars of jam
Strawberries, raspberries, blackberries, cherries, peach etc     use     Jam  sugar.
Blackcurrants,  Damsons, plums, etc    use   Preserving sugar.
*I used a plastic cover on bowl but there were no splatters on it,   but is does help to hold heat in.
Prepare fruit and put in large bowl,   *Microwave on high for 7 minutes,   then mash the fruit
Add knob of butter and the sugar,   stir in well until dissolved.
Microwave on high for 9 minutes,   by which time it should be bubbling,  if not,   add another couple of minutes.
Microwave on high again,   so that it is boiling for 4 minutes.        Now ready.
Wash the jars and sterilize by putting them in an over at 125 c   for say 5 minutes or microwave on high for two minutes.

This is a soup which is very good as a starter. To make the soup smooth, I use a stave mixer. Then I refrigerate before I add the cream , the smoked salmon and the chives. Keep refrigerated until serving.
